a walk in the park
today being christmas it was about 73 degress outside. did i get to enjoy it>>>> nope.
i was at work at 7am this morning and worked straight thru until 10pm this evening
the amount of covers was about 400 people and i was on the Pompano dish.
i didnt do as much as the beef but it was still quite busy. sometimes putting up 7 plates at a time.
it was a successfull day and everything went smoothly.

the research
the five cycle menu begins soon so i have been studying UP.
did anyone besides me know that you can braise in milk. italians have been doing it for centuries.
milk braised pork loin looks so good. we here are doing a milk braised lamb shoulder. other things like butter poachedveal and sous vide watermelon have led me all the around the culinary atmosphere and begining to further break my world in two.

florida wal-marts pt 2
in wal-marts parking lot we saw a jag, mercedes, bmw and a mazzerati all just parked next to each other. there is a porsche dealership and a land rover dealership here. stuff like that and then seeing the area they call englewood remind me alot of the good ole va. rich living next to dirt poor.

sur la table
our adventures in culinary took us to two new places today. at first we set out to find a resturaunt depot by the name of SRE(sarasota resturaunt equipment) store. a 40,000 sq ft warehouse. we found some pretty neat items and some things we thought we'd never find. after that we headed out to find this other supply store by the name of sur la table. turned out to be williams and sonoma on steroids. pretty neat place to go to. i tried to get the sales associate to give me my dream knife (10in Shun) but she didnt want to. :(

Blockbuster. This movie-rental chain failed to notice the future happening all around it. While Blockbuster was doubling down on retail stores and dunning its customers with loathsome late fees, Netflix wooed millions of movie fans by mailing them DVDs and offering streaming video over the Web, and Redbox set up convenient kiosks offering overnight movies for a buck. No wonder Blockbuster declared bankruptcy in September. It hopes to emerge from bankruptcy and fight back, but the company is now way behind.
My first job after high school was at the blockbuster on hydraulic rd in charlottesville virginia. at the current moment it is just a parking lot. i had alot of fun working for them. late night bowling sessions with vhs tapes, laughing at the people when they went to return videos after hours and i just shook my head and pointed to my watch. i liked watching the horrible movies choices people made. best of all was the friends i met while working there.

i came home today to beck blazing the roof off the apartment. grilled cheese burning on the stove and this guy named Nills. roomates dont know him, and he's drunker than cat piss. i think he's from minn and just broke up with his girlfriend. he leaves every couple minutes and then resurfaces only to say he's drunk and his grilfriend is on the search for combustible cocks. whatever that means. he doesnt know where he lives doesnt have a cell phone and a strange chevy blazer is outside honking it's horn.

my earliest food memory.
grandma used to make killer french toast for me as a child. even into my late teens whenever we would go to grandmas she'd always have french toast waiting for me. i remember that smell filling her home. greenbean casserole, sheppard's pie and of course clam cakes were staples of my childhood.
i decided to be a chef because i secretly loved food in a way i can't explain. my mother brings up that i was a picky eater as a child, i wouldnt eat anything i wasn't already familiar with.
in the recent i eat whatever i see because i want to know, i want to taste, and i secretly want to hate that particular item.
for a long time i hated the imagery of veganism/vegetarianism. i thought it was a cop-out to eating real food. i disagree with that now. i think tofu can be good if done correctly, strict veg items can be more of a challenge than slopping some meat starch and veg on a plate. it makes you have to think about presentation, flavor and is this more than just some veg lumped together on a plate bc i am lazy and don't want to think.

chicken dish
the chicken dish. i broke down a whole ashley farms chicken in 1:24 the dish included seared chicken breast frenched, fingerling and butternutt brandade, beechwood mushrooms crispy chicken skin crackling, a blackberry gastrique and asparagus. i finished early however i got points off for "skipping" through the chicken, no printed out recipe/time plan, i got points off because my sani-bucket wasnt portioned correctly, and i didnt use more of the chicken(i should've used the majority of it) overall it was a great learning experience and i plan on competing in every one i can.

Boca Grande is a small residential community on Gasparilla Island, in southwest Florida. Gasparilla Island is a part of both Charlotte and Lee Counties, while the actual village of Boca Grande, which is home to many seasonal and some year-round residents, is entirely in the Lee County portion of the island. It is part of the Cape Coral–Fort Myers Metropolitan Statistical Area. Boca Grande is known for its charming authentic downtown, sugar sand beaches, blue water, and world class fishing.
Its name - Spanish for "Big Mouth" - comes from the mouth of the waterway, called Boca Grande Pass, at the southern tip of the island. The pass was used as a busy shipping point for many years as the waters in the pass are naturally deep. Processed phosphate from the Bone Valley region was loaded onto waiting ocean-going cargo vessels via the Seaboard Air Line Railway at the dock located on the southern tip of the island. Shipping business to the island declined in the late 1970s, when the Port of Tampa was later dredged and phosphate shipping operations moved north to locations along Tampa Bay. Evidence of the island's industrial past can still be seen.
There are no gas stations in the village of Boca Grande, so many local residents use a golf cart as their main mode of transportation. On any given day in Boca Grande, you will see golf carts, as well as some automobiles, making their way throughout downtown. A Lee County ordinance designates all but two streets as golf cart paths. Drivers must be at least 14 years old to operate a golf cart on these designated streets.
Boca Grande provided the backdrop for Denzel Washington's movie, Out of Time, where the quiet village was re-named "Banyan Key" in reference to the banyan trees that populate the island. Scenes for the 2006 film based on Carl Hiaasen's book Hoot were also filmed on the island, which was again re-named for the filming. This time it became "Coconut Cove".
Hurricane Charley hit Boca Grande heavily on August 13, 2004, causing some $20 billion USD worth of damage to Southwest Florida. There were no deaths or injuries on the island, but many buildings were damaged and many of the banyan trees were heavily damaged.
First inhabitants were the Calusa Indians. They were living on nearby Useppa Island by 5,000 B.C. and on Gasparilla Island by 800 or 900 A.D. Charlotte Harbor was the center of the Calusa Empire, which numbered thousands of people and hundreds of fishing villages. The Calusa were a hunting and fishing people who perfected the art of maritime living in harmony with the environment. They were a politically powerful people, dominating Southwest Florida during their "golden age." Since the Calusa had no written language, the only record we have of their lifestyle and ceremonies comes from the oral history of the (much later) Seminoles, from written accounts of Spanish explorers, and from the archaeological record. The first contact the Calusa had with the white man came during Spanish explorations at the beginning of the 16th century. By the mid 18th century the Calusa had all but disappeared, the victims of European diseases, slavery and warfare.
Just like the Indians, the earliest settlers came to Gasparilla Island to fish. By the late 1870s several fish ranches were operating in the Charlotte Harbor area. One of them would later be at the north end of Gasparilla Island in the small village called Gasparilla. The fishermen, many of them Spanish or Cuban, caught huge catches of mullet and other fish and salted them down for shipment to Havana and other markets. In the 1940s the Gasparilla Fishery was moved to Placida across the bay, where it still stands today, and the fishing village died out. Today, many of Boca Grande's early fishing families are still represented in third, fourth and even fifth generation descendants who pursue many different vocations, including fishing.
In 1885, phosphate rock was discovered on the banks of the Peace River just above Punta Gorda, east of Gasparilla Island across Charlotte Harbor. It was this discovery that would turn the south end of Gasparilla Island into a major deep water port (Boca Grande Pass is one of the deepest natural inlets in Florida) and become responsible for the development of the town of Boca Grande. Wealthy American and British sportsmen began discovering the Charlotte Harbor area for its fantastic fishing (notably for the world class game fish tarpon) and hunting. It was these two discoveries - phosphate rock and fishing - that would put Boca Grande "on the map."
Phosphate was a valuable mineral for fertilizers and many other products, and was in great demand worldwide. At first the phosphate was barged down the Peace River to Port Boca Grande, where it was loaded onto schooners for worldwide shipment. But by 1905 it was felt that building a railroad to Port Boca Grande and carrying the phosphate to it by rail should improve the method of shipment.
In 1905 officials of the Agrico subsidiary Peace River Mining Company, along with engineers from the United States Army Corps of Engineers and 60 laborers, landed on Gasparilla Island and surveying and construction of the railroad began. Probably the only buildings on the island at this time were the lighthouse and the assistant keeper's house at the extreme southern tip of the island. The railroad terminus with its 1,000-foot (300 m) long pier would be built nearby. The Charlotte Harbor and Northern Railroad was completed in 1907. For the next 50 years phosphate would be shipped out of the state-of-the-art port virtually without disruption. Phosphate laden trains were off loaded directly onto ocean going freighters, and the ships took the valuable commodity to ports all over the world. In 1969 Port Boca Grande ranked as the fourth busiest port in Florida.
In the 1970s phosphate companies increasingly switched their interest to ports in Hillsborough and Manatee Counties. As more money was put into developing these ports, traffic into Port Boca Grande began to dwindle, and in 1979 the line was abandoned and the phosphate industry in Boca Grande came to an end. The port was also used as an oil storage terminal by Florida Power and Light Company. This use ceased in 2001. The oil storage tanks were subsequently removed from the 9-acre (36,000 m2) site at the southern tip of Gasparilla Island adjacent to the century-old Boca Grande lighthouse. Island residents have begun an effort to have the property preserved as part of the island's state park system.

food stuff inc.
the first pic is of the menu which ran on dec 12th 2010. we have a 4 cycle menu which means that for monday tuesday wednesday thursday they are all different menus the cycle then repeats itself for friday. so fridays menu is the same as monday's menu, sat menu is the same as tuesday and etc...
the pics are lamb chicken snapper beef grouper mushroom wellington in that order.
they are some not so nice pics of the food but it kinda gives a glimpse of what i am doing here.
not it's not so much the cookery itself that is hard it's more the unique plating that requires the talent.
i have not yet been able to work over in pantry so those items are lacking a picture.

ACF is the American Culinary Federation. Chicken Competition is a practical/exam/test...etc
in this particular one we have 10minutes to break down the bird into eight parts
1 hour to cook and 5 minutes to plate.
i am prepared to knock this one out of the park. i will be performing a play on thanksgiving.. meaning i plan to stuff my thigh's with butternutt brandade, make a cranberry sauce, and maybe a little green bean almondine. wish me luck however i think i have in the bag

back to basics.
lesson of today is if you cannot handle the basics of any task in front of you then you shouldnt try to do something that is on a higher level.
culinary-wise... don't go cheffin up a molecularly modified scallop if you havent a clue on where a scallop comes from in the first place. end of story.
another lesson that was learned today is if you don't pay attention you might miss that huge chiplet of bone in your soup. and then some poor unsuspecting culinarian comes along bites down on it and hurts his tooth. it really did hurt.

RIP my lovely french press.
before work today i decide to brew some good ole fashion starbucks coffee. so the water is boiling coffee is measured and patiently awaits at the bottom of my french press when all of sudden the press leaps off the counter and shatters before my eyes. i dropped to my knees and cried.. for he was truly a good fellow that nobody could deny.

adventures in culinary is my life here in florida as it happens to be. some things have to be kept secret for i am sworn to ultimate secrecy.. other things not so much
today for example i ate spaghetti and meatballs for lunch .. and as i am biting down i bite into a huge piece of ice. then at work i decide to be victimized and stuck in the back of the banquet truck(u-haul if you will) as we ride across the island. granted there is a whole bunch of hot food plates knives and two large shelf units i have to keep pressure on so they don't fall over. ANYWAY the back door of this said u-haul opens up as we are driving and almost sucks me out the back.then if what seems to be a wierd day gets wierder when an old guy whom i have never seen in my life decides that i am his grandson and proceeds to kiss my cheek. please someone get me some bug repellent.

food network's on and i just saw a bit for smokey robinson's seafood gumbo found in the freezer section of your local grocer. he has a machine that cuts the marinating time down to 10 minutes..
this particular magic moment
so today turned out to be a rather nice day.
we learned many things .. for instance young 14yr olds are pretty capable of beheading innocent victims and attend public school on a regular basis. (oh by the way he was supposedly forced to smoke marijuiana) if youre a fashion designer/model you can pratically torture and kidnap your fwb and get off with two year stint in jail. aaannd the country hates obama more than they ever hated goergie boy.. go figure.

never trust a skinny chef is what i have been told on many occasions.
i posted some art smith sesame street vid's on my facebook. he was such a lovable chef from top chef masters.. and now he looks horrible. gastric bypass should only be used if it helps.. not because you're rich, lazy, and have nothing better to do with your life. fitness is there for you.

so every state has a martin luther king jr blvd. right? today in my adventures i found elwood beach's mlk road and there waving right above was a confederate flag.. bigger than life. freedom of expression is cool however there should be some sort of respect shown.

wal-mart twice in one day is bad. very bad.
so florida is just one big retirement home. rascals must have a home base production plant somewhere near here. too bad i didnt think of that idea.. i might be famously rich right now.
oh by the way.. there is a liqour store in wal mart. better yet there is a liqour store in cvs (xanax and vodka anyone).

so yes i am in florida
after 18 hours of driving/sleeping/eating and getting lost once or twice i finally arrived to the great gasparilla inn. resting is exhausting. beaches, palm trees, beer, and excellent seafood. times are tough and i am in paradise.

drug test day. i drove 14 miles off the island to sit in the waiting for no less than 2 minutes.
peed in a cup and was back in the car to hear the end of the song of which was on the radio right before i went in.
